Cauliflower Steaks are savoury and a new way to eat meatless during the week. Wash the head of cauliflower, pat dry, slice in 1 inch slices like a large slab of steak. Brush with olive oil and roast on a pan. Season with your favorite spices. I used ginger, turmeric and sea salt. Roast in the oven until golden brown, and serve over a bed of hummus or mashed potatoes or even applesauce. Roasting the cauliflower brings out the nuttiness and somehow transforms the flavor of an often forgotten vegetable, not to mention the slice of steak that seems to make it more handsome and less of it's flowery self.
