Welcome December.  Let us start the holiday season by focusing on staying happy and healthy by eating fresh produce.  Stock up today with lots of fresh fruits and veggies.  There are lots of mentors around to model one's own healthy lifestyle after.  One woman who never ceases to amaze me is Mimi Kirk from "Young on Raw food." While many of us may not be devoted to an entire raw diet, we can be motivated to simply eat more "plant based foods" by adding a fresh "chop-chop-salad" salad.  I can attest to eating this crunchy salad and enjoyed it very much.  Mimi even has a video to follow to make your own fresh salad and to stock your fridge.
