Home grown Limas

Home grown Lima Beans are in the stores and they are often referred to as the King of the garden or some call them "butter beans."   Limas have a delicate flavor and are a good source of cholesterol lowering fiber.  They are high in fiber and very good for individuals with diabetes or who are hypoglycemic.  One cup of lima beans contains 24.9 % of the daily value of iron.  Our Dad, "Paul" loved them cooked with ham hocks, chopped onion or simply cooked and served with salt and butter.  When cooking, they do produce a foam, so you need to drain as well as rinse well before cooking and removed any sand or stones after you have shelled them.  I love eating them as a snack and you may also want to freeze them for a later date.  I hope you will pop in to Paul's and pick up some limas today.
