Embrace Spring vegetables by welcoming leeks, fennel, beets, fresh ginger, asparagus, carrots into your diet.  Clean, peel if needed, roast, steam, chop and enjoy all the tastes and textures. Play around with your favorite spring veggies and add herbs, garlic and sprinkle with sea salt and dress with olive oil and vinegar or fresh lemon juice.  All of the sudden the embrace of Spring on your plate will feel like a hug of healthiness.
