Spring Greens

Once Spring rolls in, I really can hardly contain my desire for eating more greens.  Gathering fresh greens and creating healthy salads and soups is something I find to be joyful in the midst of life's daily challenges.  Our Father, Paul loved bringing home a "mess" of kale or a basket of beans and giving each of us a job to do.  Truly, it was one part therapy doing those little jobs while we sat down at the kitchen table.  Jobs such as, shelling limas or clipping the ends of the green beans.  Although things have evolved and we are no longer cooking our greens until they are 5o shades of gray, but rather enjoying the freshness of greens raw or dressed with lemon and olive oil.  Welcome a new season and a fresh start.  Get your greens today and enjoy them.
