
Snow peas are delightful. Although they have nothing to do with snow but everything to do with being a member of the pea family. Often used in Asian stir fry or in salads, they add a crunch and an interesting taste as well. Toss washed snow peas into a boiling bath for only 30 seconds to one minute and then drain and rinse with a cold bath to keep them green and crunchy. Use them in a salad, with watercress, bamboo shoots, hearts of palm and radishes for a taste of springtime. Enough of snow but never enough of fresh snow peas.
