It's winter and time to stock up on veggies and then create an array of delightful soups and salads to have on hand.  Roast root veggies, peppers or cauliflower in the oven with olive oil and fresh herbs.  Add spices to your liking, curry, cayenne pepper and garlic.  Mash potatoes, turnips, butternut squash and serve warm as sides.  Hope you feel inspired to create some veggie dishes this weekend.  Pick up some fresh veggies today at Paul's Fruit Market.
