Latkes season

Latkes are easy to make and to share during the holidays.  My Mother used to make them and serve them for dinner with a side of applesauce.  While there are many recipes, latkes are simple to make.

Simply wash and peel 1 pound of potatoes and let it drain, squeeze out the remaining liquid. Add one chopped onion.  

Whisk one egg and mix.  Form into patties and then brown in a hot pan with your choice of oil or butter.  Season to taste.  You will find it will go a long way and that latkes are filling.  You may keep them hot in the oven as they truly are best when served piping hot.

Serve with a side of sour cream and applesauce or freshly chopped parsley and scallions.
