Peaches

We are now in prime peach season. My Dad LOVES peaches. For Father's Day I made a peach pie that is not just any peach pie. I call it peaches and cream pie. Now, I would post a photo, but then I would have to make a pie and THEN, I would have to eat some. I don't know about you, but I cannot eat just one piece. The topping gives it a thin, crisp coating like creme brulee. Here's the recipe:


Peaches and Cream Pie

  • 3/4 cup sugar
  • 2 T. flour

Whisk together. Add:

  • 1 cup sour cream
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 tsp. salt

Stir well and and add, stirring carefully:

  • 2-1/2 cup peaches, peeled and sliced or diced

Pour into an unbaked pie shell and bake at 400 degrees for 25 minutes or until a knife or toothpick comes out clean. Top with:

  • 3 T. flour
  • 3 T. softened butter
  • 1/2 cup brown sugar

Crumble together and sprinkle over the top of the pie. Run under the broiler until browned and crisp. Watch carefully so it does not burn. Serve warm or at room temperature. Refrigerate any leftovers.
